What's on your menu tonight?

Egg and Turkey Bacon Enchiladas using a recipe from Jennieo.com. Still using up the eggs from the Easter sales and bought the Jennie-O bacon on sale with coupon from HT a couple weeks ago. I am also using some sauteed mushrooms, green peppers and onions in the enchiladas.

Saffron rice (Free Mahatma rice with sale and .50 coupon at HT and LF recently)

Fruit salad with cantaloupe (FL for $1.79 for whole cantaloupe) and strawberries (HT for $1.25/lb)
