Energy Balls
1 1/2 cups old fashioned/rolled oats (not quick oats)
1/4 cup peanut butter or almond or soy butter
1/4 cup honey
1/2 teaspoon vanilla
1/3 cup mini M&Ms, mini chocolate chips or dried cranberries
Dash of salt
- Mix all ingredients together in a medium-sized bowl and stir until well combined.
- Roll into 1 1⁄2 inch balls and set them on parchment or wax paper. Wash or dampen hands after every three to four balls to help keep the ingredients from sticking to your hands.
- Refrigerate balls for 15 – 20 minutes to help them harden.
- Enjoy your energy boost!
