We have a small garden in my backyard that's giving us a huge crop of cucumber this summer. We're eating them whole, sliced, on sandwiches and as pickles. But I also knew I'd be making this childhood favorite.

We have a small garden in my backyard that's giving us a huge crop of cucumbers this summer. We're eating them whole, sliced, on sandwiches and as pickles. But I also knew I'd be making a favorite from my childhood - cucumber salad with sour cream.

This is a simple recipe that involves some vinegar, sugar, cucumbers, onions and sour cream (or mayonnaise, if you prefer). Here's how my mom makes it.

Cucumber Salad with Sour Cream
Four medium cucumbers, peeled (if desired) and very thinly sliced
1 onion, thinly sliced and separated with rings
3 tablespoons white vinegar
1 tablespoon sugar
Pepper to taste

1/2 cup sour cream (or mayonnaise)

Whisk the vinegar, sugar, pepper and sour cream together. Mix the cucumbers and onions together with the dressing. Let sit for several hours ... even overnight.
