Recipe: Chicken rice puffs

It’s back-to-school time and time to think about quick dinners and easy healthy lunchbox ideas! I love this recipe because you can add additional ingredients that are your family’s favorites. I’ve made these with broccoli, bacon, and even shaved Brussel sprouts (shhh… don’t tell my children!). These also make a terrific after school snack. Enjoy!

Chicken Rice Puffs
1 cup cooked chicken, chopped
¼ cup chives
Salt and pepper taste
½ cup grated carrots
3 eggs, lightly beaten
1 cup cooked rice
¼ cup cheddar cheese (optional but adds a lot of flavor!)

(Any additional cooked veggies or ingredients your family enjoys)

Directions:

Preheat oven to 350 degrees. Cook rice according to package directions. Combine cooked chicken, chives, salt and pepper, cheese, grate carrots, eggs and cooked rice in mixing bowl until combined.  Spray muffin pan with non stick spray.  Spoon mixture into muffin pan filling ¾ full and press down lightly with spoon.  You can add an additional small amount of cheddar cheese on the top for a crunchy cheesy crust!  Bake about 12 minutes.  Let sit in muffin pan for about 5 minutes after cooking.  Loosen edges with knife.  Enjoy!
