Monday (It’s our orange themed meal of the week!)
Salmon
Mahatma saffron rice (5 oz is .69 at Lowes Foods through 9/25)
Steamed carrots (baby carrots good price at Lowes Foods through 9/25)
Cantaloupe (BOGO at Harris Teeter through 9/25)
Tuesday
Herb & garlic chicken in slow cooker (using free Ken’s Marinade from super doubles)
Baked sweet potatoes
Salad
Wednesday
Bagels & cream cheese
Noodle kugel (see recipe below and it is in the WRAL Recipe Database)
Fruit salad
Thursday
Beef stew in slow cooker (stew meat on sale at Harris Teeter through 9/25)
Potatoes, carrots, mushrooms and onions cooked with stew meat (good deals on potatoes, carrots and onions at Lowes Foods through 9/25)
Rolls
Tomato and cucumber salad
Friday
Pizza Night! - Dr. Oetker Ristorante frozen veggie pizza bought during super doubles for $2 each
Pear slices
Noodle Kugel Recipe
24 oz container of low fat cottage cheese
16 oz container of light sour cream
3/4 cup sugar
5 eggs, beaten
1/2 stick butter melted
1 Tbsp. imitation vanilla
12 oz wide egg noodles, cooked and drained
1 Tbsp cinnamon/sugar mix
Preheat oven to 350 degrees.
Mix all the ingredients except the noodles and cinnamon sugar. Stir in the noodles gently. Pour into a 13 x 9 inch baking dish. Sprinkle the top with cinnamon/sugar mix.
Bake 50 minutes to 1 hour. Cool about 5 – 10 minutes before serving.
