Monday meal plan: New quinoa recipe!

On the menu this week I have a new Quinoa recipe, grown-up grilled cheese, teriyaki noodles and tofu, Southweastern egg & cheese tortilla roll-ups, salmon and more!

On the menu this week I have a new Quinoa recipe, grown-up grilled cheese, teriyaki noodles and tofu, Southweastern egg & cheese tortilla roll-ups, salmon and more!

 

Monday

Grown-up grilled cheese: Whole wheat bread with Sargento thin sliced Swiss cheese, spinach and tomatoes topped off with a delicious red pepper spread from Trader Joes

Tomato soup (Trader Joe’s Creamy Tomato Soup – it’s incredible)

Apple slices


Tuesday

Grilled chicken (on sale at Kroger)

Whole wheat rolls

Salad


Wednesday

Egg & cheese tortilla roll-ups (Southwestern style with sautéed green peppers and onions and salsa)

Oreida peppers and onion hash browns

Cantaloupe ($1.50 at Food Lion through Tuesday)


Thursday

Teriyaki tofu, broccoli slaw and whole wheat noodles

Tomato and cucumber salad in Italian dressing


Friday

Baked or grilled salmon (not sure yet)

Cucumber and Red Bell Pepper Quinoa (I will probably use the easy and light recipe from Food Network found HERE )
