Monday

Teriyaki tofu and veggie stir fry

Long grain and wild rice

Egg rolls – Kahiki egg rolls on sale during last super doubles at Harris Teeter for under a quarter per box after sale and coupon

Tuesday

Chicken Parmesan using Buy 1 Get 2 free chicken breast from Harris Teeter last week ($1.70/lb!) and free House Autry breading from their booth at the Southern Women’s Show this weekend. Cheese was .50 for 8 oz from Food Lion last week and sauce was $1 after sales and coupon. Chicken breast is also on sale at Lowes Foods and Food Lion through Tuesday, 4/12.

Steamed carrots with fat free spray butter and a touch of parmesan (carrots are only $1.17 for a 2 lb package at HT right now – that’s a great deal!

Wednesday

Salmon burgers on bun with light mayo, lettuce, tomato and onion (Trident frozen salmon burgers were BOGO at Lowes Foods a few weeks ago)

Steamfresh pasta side with veggies

Grapes (.99/lb at Food Lion through 4/12)

Thursday

Shrimp soft tacos with SeaPak Shrimp Poppers, cheese, lettuce, tomato, onions, guacamole (free during last HT super doubles with coupon), sour cream (.29 at Lowes through 4/12 with printable coupon)

Spanish rice

Orange slices

Friday

Baked ravioli (frozen Celentano cheese ravioli BOGO at HT this week through 4/12, cheese .50 at Food Lion last week, sauce $1/jar no sale with coupon couple weeks ago)

Steamfresh broccoli

Saturday

Out to dinner with a Groupon coupon

Sunday

Baked Ravioli Recipe

Ingredients
1 bag frozen light cheese or meat ravioli, approx. 24 oz
1 jar pasta sauce, approx. 26 oz
4 oz. shredded mozzarella cheese or Italian cheese mix, lowfat or 2%
2 oz. grated Parmesan cheese

Garlic powder and Italian spices to taste

Preheat oven to 350 degrees. Spoon 1/3 jar over bottom of 13 X 9 pan. Place frozen ravioli on bottom of pan evenly. If you have a couple extra ravioli once bottom is covered, place them on top of other ravioli. Pour the remaining sauce over ravioli and around the edges to cover the ravioli. Add spices to taste. Sprinkle the shredded cheese and the parmesan cheese over the top. Cover with tin foil & bake for 25 minutes. Remove foil and bake for another 10 minutes. Serve with garlic bread and vegetables. Enjoy!

Additions: you can easily add your favorite veggies like spinach, green peppers, onions and mushrooms or diced cooked chicken or cubed tofu to this dish. Place them on top of the ravioli before adding the sauce and cheese.
