Sunday Meal Cost Breakdown:

$3.38 - 2 containers tofu from Whole Foods ($1.69 each container)

$0.32 - 16 oz bag frozen Bird's Eye stir fry veggies with red, green and yellow peppers on sale BOGO and used .50 coupon doubled last week

$0.30 - fresh onion sliced and cooked with other veggies

Free - Comet Long Grain Rice: Free at Lowe's Foods a couple weeks ago with sale and coupon

$0.05 - Teriyaki Sauce for tofu and veggies

$0.50 - Milk for kids and water for hubby and me

Total for entire meal: $4.55

Update 12-21: I see there are some requests for recipes (which is great!) so I will add them to this blog post as I make them during the week. Here is tonight's chicken recipe. I just put it in the crockpot and can't wait to try it.  It's almost embarrassing that it is so easy to make.  I'll post the mac and cheese recipe tonight, once I have put it together and have exact ingredient measurements.
Creamy Crockpot Garlic Chicken
Ingredients
3 boneless skinless chicken breasts
½ can Progresso creamy mushroom soup
¼ onion chopped
6 button mushrooms, sliced (I would have used more but only had 6)
Approx. 1 tsp garlic powder
½ tsp black pepper

½ tsp Italian spices

up to 1/4 cup flour as a sauce thickener when chicken is done


Place chicken in crockpot. Add mushrooms and spices. Pour soup over ingredients. Cook on low 5 to 6 hours (check at 5 hours to make sure it’s not done already). Slice chicken breast when done. If sauce is too thin for you, add ¼ - ½ cup flour to thicken. Serve chicken breast slices with creamy garlic mushroom sauced poured over them. Serves 4-6. Enjoy!

Total cost for chicken recipe:

Chicken (1.45 lbs): $2.16 (Bought at Lowe's Foods a few weeks ago for $1.49/lb. There will definitely be leftovers for lunch tomorrow)

Updated: 12-22: The creamy crockpot garlic chicken was delicious! Both the hubby and my 10 year old loved it! My 8 year old has a stomach bug so she will have to wait until next time to try it.  I am so relieved they liked the dish because I made up the recipe as I was putting it together yesterday.  The mushrooms gave it a fabulous flavor. I added just under 1/4 cup flour to thicken the sauce after the chicken was done.

Here is the mac & cheese recipe. It was very good as well. It was also good with lunch today!

Homemade Mac and Cheese

Ingredients:

16 oz pasta (I used Barilla Plus Multigrain Farfalle)

16 container light sour cream

8 oz shredded cheddar cheese

1/3 cup spaghetti sauce

1/4 cup skim milk

1/4 tsp pepper

pinch of salt

Pre-heat oven to 300 degrees. Cook pasta and drain. Pour pasta back into pot and add all remaining ingredients. Stir thoroughly. Cook at 300 degrees for 15 minutes and then turn oven to 450 and broil for 2 and 1/2 minutes. Broiling gives the cheese on top a nice browned look and taste. Serves 6-8 (we had enough left over for all of us to enjoy it at lunch the next day).

Barilla Plus Pasta: .25 using tripled coupon a couple months ago

Breakstone's Sour Cream: .29 using sale and .55 coupon doubled at Lowe's Foods this week - sale good through today, 12-22

Kraft Cheddar Cheese: $1 using sale and coupon and fresh rewards from Lowe's this week

Spaghetti sauce: .15 Bertolli using sale and coupon from Lowe's Foods this week

Milk: Free using Target gift card from cashing in my credit card points (yes, I pay off my credit card every single month and I have a no fee card)

Pepper and salt: .05

Total for mac and cheese dish: $1.75

Regular retail price of dish without sales and coupons: $7.50- yikes!
