It hasn't been that long since I featured Amy Hambrick, a mom of two in Raleigh and owner of Simply Small Sweets back in October.

Hambrick launched her business in January. She makes bite-sized cupcakes, scones and quick breads. She also makes what she calls Simply Energy, little bite-sized bits of all natural ingredients for athletes and those on the go. The business feeds two of her passions - baking,  but eating those treats in moderation, and exercise.

Hambrick went from little physical exercise four years ago to running marathons to finishing an Ironman Triathlon this summer. In the process, she lost a lot of weight and focused on paying attention to portion size.

"Everything is getting bigger, why not make things smaller," she told me of her business idea.

Hambrick works to come up with unique twists on seasonal flavors. For Thanksgiving, she offered a cranberry cupcake, sweet potato scone and pecan strudel quick bread. From Dec. 1 to Jan. 1, her offerings include Christmas spice with brandy buttercream cupcakes, gingerbread scones and stollen quick breads.
