Ice cream shop to open in Holly Springs

Holly Springs is about to get a little sweeter.

Lesley Richmond, owner of Mama Bird's Cookies & Cream, is preparing to open her first ice cream, cookie and dessert shop at 304 N. Main St., Holly Springs, in the next couple of months.

The mom of two and wife of a Holly Springs firefighter has been a life-long baker and maker of treats and has been serving up ice cream at events with an old-fashioned ice cream cart. Richmond also is senior outreach coordinator for Meals on Wheels of Wake County and a girls' softball and basketball coach for the town's parks system.

I can't wait to meet up with Richmond and check out her shop and creations once she opens! She shared a bit with me about her hopes for Mama Bird's, which is named after her daughters.

"My vision for the shop will allow children to explore new flavors and create their own ice cream sandwiches while adults reminisce about when they were kids eating ice cream," she tells me. "When you visit the store, the smell of freshly baked waffle cones and cookies will smack you in the face! A wide variety of sweet treats will also be available. Not in the mood for ice cream, try a smoothie, ice cream pop, or maybe a cold brew coffee from our friends at Sludge Coffee."

Nearly all of the ingredients in the ice creams will be made in house and added to a custard-based ice cream. I'm there!
