Fire in the Triangle: Four Square vs. Il Palio recap

The first second-round match-up in the Fire in the Triangle competition took place last night at 1705 Prime in a very close battle. 
Four Square chef Shane Ingram took on Adam Rose of Il Palio in the "Iron Chef" style event.

The secret ingredients were Siberian Sturgeon and Perfect Puree!

Guests were treated to a six course meal - three dishes from each chef. Diners and judges were not told which chef made which dish. Voting was done on a dish-by-dish basis via smartphone. 

Here's a rundown of the courses:

First course: Confit of Sturgeon Salad with Roasted Peaches, Green Beans, Perfect Puree Guava & Black Quinoa Dressing (Four Square)
Course 2: Milk Poached Veal Eye Round with Sturgeon Aioli, Perfect Puree Green Apple, Original Sin Mustard Vinaigrette & Capers. (Photo by Judy Royal.)
Second course: Milk Poached Veal Eye Round with Sturgeon Aioli, Perfect Puree Green Apple, Original Sin Mustard Vinaigrette & Capers (Il Palio) - Highest scoring dish of the night.
Third course: Mangalitsa Bacon Wrapped Carolina Sturgeon with Pesto, Crab, Creamed Corn, Sweet & Sour Peppers & Sturgeon Cracklins (Four Square)
Course 4: Grilled Sturgeon with Roasted Red Pepper Pasta Rota, Fire Roasted Trinity Bell Pepper, Caramelized Onion & Crab Broth, Kalamata Olives & Andouille. (Photo by Judy Royal.)
Fourth course: Grilled Sturgeon with Roasted Red Pepper Pasta Rota, Fire Roasted Trinity Bell Pepper, Caramelized Onion & Crab Broth, Kalamata Olives & Andouille (Il Palio)
Fifth course: Vanilla Chiffon with Lemon Cream, Mint Pickled Sturgeon & Honey Apple Perfect Puree (Four Square)
Sixth course: Goat Cheese Panna Cotta with Perfect Puree Stone Fruit & Vodka Soup, Candied Sturgeon, Roasted Pistachios & Mint (Il Palio)
In the end, Rose defeated Ingram by less than 2 percentage points. He will go on to face the winner of the Tuesday's contest. Here is a look at all of the second round match-ups: 
July 10:  Ryan Payne (Weathervane) vs. Scott James (Midtown Grille)
July 16: John Childers (Herons at Umstead) vs. Serge Falcoz-Vigne (518 West)
July 17: Dean Wendel (Flights) vs. Christopher Hill (The Oxford)
July 23: Adam Rose (Il Palio) vs. July 10 winner
July 24: July 16 winner vs. July 17 winner
July 31: July 23 winner vs. July 24 winner

Fire in the Triangle is part of the Got to Be NC competition dining series. The winner from the Triangle will go on to the "final four" to compete against the winners of the Fire on the Rock, Fire on the Dock and Fire in the Triad competitions. The Rock and Dock winners have been selected, and the Triad competition is coming up in August and September. The last chef standing wins $2,000 and the coveted red chef’s jacket. The runner-up will get $500.
