Mmmm...banana muffins!

Just cooked up a batch of super easy banana muffins and thought I would share the recipe.

A couple days ago I purchased some ripe bananas from Lowes Foods for .39 per pound and they were very ready to be used by today! What better use of ripe bananas than....Banana Muffins! I just made a batch of these super easy and super delicious banana muffins that will be so tasty for breakfast. You can also add nuts to the recipe, but my youngest doesn't like them in muffins so these are nutless.

 

 

 

 

Banana Muffins

 

Ingredients

4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda and a pinch of salt
3/4 cup whole wheat flour

3/4 cup of all-purpose flour

Preheat the oven to 350°F. Mash peeled bananas in large mixing bowl with fork. Melt butter in microwave for approx. 35 seconds. Mix melted butter into the mashed bananas. Mix in the sugar, egg, vanilla, baking soda and salt. Slowly mix in the flour. Pour evenly into a 12 count muffin tin. Bake for 22 to 26 minutes, checking after 22 minutes. If toothpick inserted into center of muffin comes out clean, it's finished baking. Enjoy!
